Apple Pie
INGREDIENTS:
- 2 apples
- 1 cup Caremoli Gluten Free Pancake Mix (½ package)
- 2 tablespoons sunflower oil (or melted butter)
- ½ cup cane sugar
- 2 medium eggs
- 1/3 cup plant-based milk (or milk)
- 1 tablespoon vanilla-flavored baking powder
- 1 grated lemon peel
- 2 tablespoons sugar
- 1 tablespoon cinnamon powder
- 1 tablespoon powdered sugar to sprinkle
INSTRUCTIONS:
- Preheat static oven at 350° F (180°C)
- Whip eggs, cane sugar and grated lemon peel with an electric whisk for at least 3 minutes at a high speed, until you obtain a fluffy and clear mixture
- Add sunflower oil (or melted butter) and keep whipping with the whisk
- Add 1 tablespoon pancake mix previously mixed with the sifted baking powder and then 1 tablespoon soymilk. Alternate them until you finish whisking at medium speed
- At this point, the mix should be creamy and not too liquid
- Wash the apples, peel and cut them in thin slices
- Pour mixture in baking buttered pan
- Level the mixture with the back of a spoon
- Finally add apple slices one by one arranging them like spokes of a wheel making sure to occupy all spaces
- Mix sugar with cinnamon powder and spread it onto the cake making sure to cover all surfaces
- Bake the cake for approximately 45 minutes. Time is indicative and can vary according to the type of oven you have, so remember to always test readiness with a toothpick
- Let it cool down and once cold sprinkle powdered sugar
