Focaccine with Parmesan
INGREDIENTS:
- 1 lb Focaccia Mix (the whole pack)
- 1 + ¾ cups warm water
- ¼ cups olive oil
- 1 cup grated parmesan cheese
- 1 tbsp + 1 tsp dry yeast
- 1 tsp oregano
- 1 tsp rosemary
- 1 tsp salt
- Olive oil for brushing
INSTRUCTIONS:
- Preheat the oven to 85°F
- Melt yeast in 1 cup of warm water, whisk with a fork
- In a large bowl pour Focaccia Mix, add water with yeast, add rest of the water, olive oil, grated parmesan cheese and salt
- Work dough first with a fork or a spatula and then with your hands until completely combined
- Divide dough in 12-15 small balls
- Flat the balls down by pressing surface with olive oil greased fingertips
- Place the Focaccine on a greased baking tray. Turn off the oven but leave the light on and place the baking tray inside
- Let the Focaccine rise for 50 minutes
- After this time, take the Focaccine out of the oven and turn it on to 390°F
- Brush the Focaccine with some olive oil and spread oregano, rosemary and salt
- Now bake them for approximately 25 minutes until golden
- Take them out and let them cool
- You may now cut them and fill them with grilled vegetables, Mozzarella cheese and tomato or with anything you desire
