Oatmeal Raisin Cookies

Oatmeal Raisin Cookies


  • 1 package Caremoli Gluten Free Cookie Mix
  • 1 stick of butter (1/2 cup), softened
  • 2 large eggs, room temperature
  • 2 tablespoons unsulphured molasses
  • 1/2 cup Certified Gluten Free Rolled Oats
  • 2/3 cup raisins
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg


  • In a large bowl or stand mixer, beat together butter and eggs, until light and fluffy
  • Add molasses and continue to combine until incorporated
  • With the mixer off, add in Caremoli Gluten Free Cookie Mix, cinnamon, nutmeg and oats
  • Beat until just combined. Add raisins and combine again
  • Line two baking sheets with parchment paper
  • Using a cookie scoop, scoop 12 uniform sized cookies, 6 on each tray, spaced at least 2 inches
  • Transfer the baking sheets to a refrigerator and chill the dough for 30-60 minutes
  • When ready, preheat an oven to 350 degrees
  • Bake cookies for 14-16 minutes, until edges crisp. Enjoy!
