Apple Crumb Muffins

INGREDIENTS:

  • 1 package Muffin Mix
  • 1/3 cup unsweetened apple sauce
  • 1/3 cup cashew yogurt
  • 2 tbsp vegetable oil
  • 2 eggs
  • 1/2 cup almond milk
  • 1 tsp Cinnamon
  • 1 apple, peeled and cubed
  • Topping:
    • 1/4 cup gluten free oat flour
    • 2 tbsp oats
    • 3 tbsp brown sugar
    • 1 tsp cinnamon
    • 3 tbsp vegetable oil

INSTRUCTIONS:

  • In a small bowl, combine oat flour, oats, brown sugar and cinnamon. Stir to combine
  • Add in vegetable oil and stir to create an evenly moist mixture
  • While preparing the muffin batter, place bowl in the freezer
  • In a large bowl, add yogurt, applesauce, vegetable oil, eggs and almond milk. Wisk to combine
  • Add in Caremoli Muffin Mix and cinnamon and mix just until combined
  • Fold in cubed apples
  • Preheat oven to 400 degrees
  • In either a standard 12 muffin pan or a jumbo 6 muffin pan, add muffin liners
  • Portion mixture evenly and top with oat mixture
  • Place muffin tray in oven, immediately turning down to 350 degrees. Bake 25 minutes
