Brioche Buns


  • 16 Oz Focaccia Mix (the whole pack)
  • 2 tsp dried yeast
  • 1 + ½ cups warm water
  • 2 tbsp + 2 tsp whipping cream
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 egg yolk for brushing
  • 2 tsp whipping cream for brushing
  • 2 tbsp sesame seeds


  • Preheat the oven to 85°F
  • In a large bowl mix flour, salt, yeast with warm water
  • Add olive oil
  • Work dough for a few minutes then add whipping cream little by little
  • Switch off the oven and place dough to rise for an hour
  • After this time take dough out of the oven and turn it on again to 85°F
  • Work dough with your hands again and form a long sausage
  • Cut the dough in small buns and place them in a muffin tray
  • Brush surfaces with yolk and whipping cream and spreads sesame seeds on top
  • Place them in the oven again to rise for 30 minutes
  • Take them out of the oven and turn it on to 390°F
  • Bake your buns for approximately 20 minutes until golden

These buns are delicious with hamburgers or filled with ham and cheese
