Muffins with Apples & Cinnamon

INGREDIENTS:

  • 1+ ½ cup Muffin Mix
  • 2 medium eggs
  • ¼ cup corn oil
  • ¼ cup milk
  • 2 apples
  • 2 tsp vanilla extract
  • 2 tbsp sugar
  • Vanilla-flavored powdered sugar
  • 1 pinch powdered ginger
  • ½ tsp cinnamon powder

 

INSTRUCTIONS:

  • Preheat the oven to 375°F
  • Peal and dice the apples and spread sugar and cinnamon on top
  • In a large bowl break two eggs and whisk them
  • Add milk, vanilla extract and ginger
  • Start to add 50% of the muffin mix, add oil and then, while whisking, the balance of the muffin mix
  • Add apple dices
  • Transfer batter into the muffin tray, up to approximately 60%
  • Bake for approximately 30 minutes
  • With a toothpick verify readiness before taking them out of the oven.
  • Spread cinnamon and icing sugar and serve still warm
