Ham & Cheese Crepes

INGREDIENTS:
1+3/4 Cups Pancake Mix
3 Large eggs
2+1/4 Cups of milk (or almond milk) at room temperature
½ Tsp salt
INSTRUCTIONS:
- In a large bowl, whisk eggs
- Add milk, Pancake Mix and salt
- Whisk again until completely combined
- Cover the bowl, chill the batter and let it rest for approximately 30 minutes
- Pull the batter out of the fridge and whisk it again for a couple of minutes
- Grease and preheat a pan on low/ medium heat
- Pour a ladle of batter and gently move the pan to cover the bottom evenly
- Cook the crepe until golden
- Heat a separate pan, place one flat crepe, spread some soft cheese, add two slices of ham/turkey, roll the crepes or fold them in 4 and heat them for a couple of minutes
- In alternative: preheat the oven at 350°F. Fill and roll the pancakes, place them in a pre-greased oven pan, sprinkle some parmesan cheese on top and bake them for approximately 30 minutes
