Ham & Cheese Crepes


1+3/4 Cups Pancake Mix

3 Large eggs

2+1/4 Cups of milk (or almond milk) at room temperature

½ Tsp salt



  • In a large bowl, whisk eggs
  • Add milk, Pancake Mix and salt
  • Whisk again until completely combined
  • Cover the bowl, chill the batter and let it rest for approximately 30 minutes
  • Pull the batter out of the fridge and whisk it again for a couple of minutes
  • Grease and preheat a pan on low/ medium heat
  • Pour a ladle of batter and gently move the pan to cover the bottom evenly
  • Cook the crepe until golden
  • Heat a separate pan, place one flat crepe, spread some soft cheese, add two slices of ham/turkey, roll the crepes or fold them in 4 and heat them for a couple of minutes
  • In alternative: preheat the oven at 350°F. Fill and roll the pancakes, place them in a pre-greased oven pan, sprinkle some parmesan cheese on top and bake them for approximately 30 minutes
